I think it's absolutely fine to select something from a book, providing it's dialogue and not description. You can often cut and paste bits together and it doesn't have to be long. Choose something that's as close to her age and type as you can . The ideal piece is something you can honestly imagine...

I think the answer is that there will usually be a day off. I'm guessing that there would be occasions where one might have to work on the "rest day" because of unusual circumstances.

It would depend what was in individual contracts.

I think it's impossible to know the answer to that :) . I can imagine some circumstances where that could happen, but I would think generally not. It depends what it's for and how many they're seeing etc and what arrangements the CD and director have decided upon.

The casting assistant may weed people out but they won't be making final decisions. It probably depends on the project and the status of the assistant.
